Power Lunch at Portland’s Jackrabbit

 

Jackrabbit (https://gojackrabbitgo.com), situated inside one of Portland’s top hotels, The Duniway, is the new restaurant concept by celebrity Chef Chris Cosentino. Chef Cosentino’s nose-to-tail philosophy is evident at Jackrabbit.

The restaurant specializes in sharable foods and some of the best house-cured meats I’ve had. The bar is staffed by true professionals who shake well-made craft cocktails for restaurant patrons and folks sitting at the adjacent bar.

I stayed at The Duniway for four nights so I had an opportunity to eat at Jackrabbit several times. After the long flight to Portland from New York, I headed straight there for lunch.

The lunch menu offers enticing options, all priced under $25. I opted for the Power Lunch “20 in 20” which allows for a soup/salad/bruschetta with a choice of daily fish, Italian dip or grilled cheese and cookies to go (three courses for $20 served in 20 minutes). I chose the French onion soup with bone marrow and the appropriate amount of quality cheese and the grilled cheese, to keep with the cheesy theme. Jackrabbit uses Taleggio and honey on perfectly buttered and grilled bread – simply outstanding.

I highly-recommend lunch at Jackrabbit. It’s not only a bargain, it’s a good meal prepared with pristine ingredients.
